Zucchini the Ottolenghi way

In summer, our panty is stuffed with zucchini from the garden. When I was a kid I used to love stuffed zucchini with minced meat and loads and loads of grilled cheese on top. Then I got to know the great Ottolenghi. You grill slices of zucchini an top it with balsamic oil, cheese and mint. It is so good, I swear I would eat it instead of opening a bag of potato crisps. And that says a lot.
